ETYMOLOGY
In the 20th century, the Italian dessert name tiramisu was borrowed into the English Language which literally means “pick me up! or lift me up!”

The Italian verb tirare comes from the Latin verb tirare “to pull or draw,” mi, from Latin me, mihi “me,” & su, from Latin sūsum “up.”

MEANING & USE

Tiramisu is a popular Italian dessert made with layers of coffee-soaked ladyfingers, mascarpone cheese, cocoa powder, and sometimes a touch of liqueur like Marsala or Kahlúa. It’s often served chilled.

ティラミスはコーヒに浸したレディーフィンガークッキー、マスカルポーネチーズ、ココアパウダーなどを層にして重ねたイタリアのデザート。マルサラワインやカルーアを注ぎ足したものもある。ふつうは冷やしたまま食べる。


英語になったのは1980年代。イタリア語の tirami su 「私を引っ張り上げて = 元気にして・元気ちょうだい」から。イタリア語はラテン語の子孫語 (daughter language) だから、 tira- の不定形 tirare、一人称代名詞目的格 mi、副詞 su はすべてラテン語に由来している。


このお菓子は世界中に知られていて、世界中の言語がイタリア語 tiramisu を借用している。レシピも多種多様である。

ETYMOLOGY

In the late 19th century, the Russian term borsch entered the English vocabulary which is said of Ukrainian origin, meaning a “soup made with beetroot & several ingredients, served cold or hot & often with sour cream.” Various types of borsch are traditionally eaten in Ukraine, Russia, Eastern Europe, & by Ashkenazim or Yiddish-speaking Jews.

ボルシチには色々な種類があり、ウクライナ、ロシア、その他の東欧諸国、および、イディッシュ語を話すユダヤ人にとっての伝統料理である。

Japanese stem uma- (うま-) (adjective umai “good, delicious.”) 

In the 18th century, the Japanese noun umami appeared.  The suffix sound -mi forms a noun, but it is often written by the kanji “taste.” 

1908, Tokyo Imperial University Professor Kikunae Ikeda obtained a patent to produce the umami essence or monosodium glutamate by extracting from kon-bu, edible kelp popularly used for Japanese cuisine, and categorized it as a 5th taste following the 4 basic tastes, traditionally considered that the human tongue could feel: sweet, sour, salty, & bitter.

In the 20th century, umami was borrowed into the English language meaning the “deliciousness, good taste (or taste of monosodium glutamate.) Also, “monosodium glutamate” itself.

日本語のうまみは食べ物の味が良いこと。
東京帝大の池田菊苗教授は、
一九〇八  (明治四十一) 年、昆布から
旨味成分のグルミン酸ナトリウムを
抽出する特許を取得、
人間の舌が感じ取れるとされる
甘み、酸っぱみ、しょっぱみ、苦味に
つづく五番目の味とした。
教授はのちにこの成分を「味の素」の
商品名で世に送り出した。
Umami は「おいしさ」のほかに、
より具体的に
「グルタミン酸ナトリウム」
を指すこともある。

モンブラン


モンブラン

Mont-Blanc 
は、フランス語で、字義は
「白い山、白山」のことだが、
栗の砂糖づけとクリームなどを
トッピングしたお菓子の一種。
栗を用いるので、
mont-blanc aux marrons
「栗のモンブラン」ともいう。

伊仏スイス国境にある
冠雪したアルプス山脈の
標高四千八百七メートルの
最高峰モンブランと
似ていることから、
こう呼ばれようになった。

イタリア語では
monte bianco

発祥は十五世紀イタリアで、
フランスでは十七世紀に一般化し、
日本には二十世紀に入ってきた。

Black Russian


Black Russian

「黒いロシア人」とは、
ウォッカにコーヒーリキュールを
混ぜ合わせたカクテル。
コーラなどを混ぜることもある。

When I was in Ireland, I saw a drink on the menu called a “Black Russian from Dublin,” which was described as a combination of vodka, Kahlúa, cola, and Guinness.

アイルランドにいた頃、メニューに「ダブリン生まれのブラックルシアン」という飲み物を見つけた。ウォッカとカルーアとコーラとギネスビールを混ぜ合わせたものだと説明書きにあった。

ウォッカにカルーアを加えて、
その上にクリームをのせた
ホワイトルシアンと呼ばれる
カクテルもある。

cappuccino

カプチーノはエスプレッソに
泡立てた牛乳をのせた
イタリア発祥の飲み物。
この単語は「頭巾、フード (付きの僧衣)
を指すイタリア語の capuchin からできた。
コーヒーの白いミルクの泡を
かぶっている様子が、
フランシスコ会修道僧の
尖った頭巾をかぶっている様子と
類似するために、
こう呼ばれるようになったのだろう。
capuchin cappa 「合羽」から作られていて、

英単語 cape とは血縁語であり、
日本語の合羽とも語源的なつながりがある。

ザウアークラウトはドイツの
「キャベツ漬け、キャベツの酢漬け」
キャベツやハーブ類に塩を加えて
乳酸発酵させたドイツの副菜。
字義は「すっぱいキャベツ」

ドイツ語の構成は
sauer =「すっぱい」
Kraut = 「葉、菜、ハーブ、キャベツ」

英単語 sauerkraut は異形もあるが、
ふつうつづりはドイツ語のまま借用。

In West Virginia, one can't cook sauerkraut or cabbage due to the odors and the offence is subject to imprisonment. 
ウェスト・ヴァージニア州では、匂いのせいでザウアークラウトやキャベツを調理してはならず、違反すると、禁固刑に処せられる。

オランダ語では -- zuurkool
フランス語では --- choucroute

十九世紀発祥の米国の俗語で
sauerkraut
「ドイツ (ゲルマン) 人」を指す。
この言葉の使い方は、現代日本人の一部が
朝鮮人を指してキムチというのに似ている。

「キャベツ」を指すドイツ語名詞としては
ほかに 
Kohl 
があり、これと血縁の英単語は 
cole
で、キャベツやケールやキャノーラなどの
「葉」を指す。
オランダ語の kool は「キャベツ」

mead の最頻出語義は「蜂蜜酒」
蜂蜜酒は人類が最初に
醸造したお酒といわれている。

蜂蜜は紀元前四五〇〇年から三〇〇〇年の
時期には言葉と共に広く伝搬していた
といわれている。紀元前ニ〇〇〇年頃の
バビロニアでは、ビールとともに
蜂蜜酒の醸造法が確立されていた。

天然の蜂蜜には酵母が棲んでいるので
水を加えるだけで発酵する。
自然界にあっては、
雨水が混ざっていないものが蜂蜜、
雨水が混ざってうまく発酵したものが蜂蜜酒、
ということになり、印欧祖語を話していた人々は
どちらも同じ単語で呼んでいたとされる。
(今日、市販品の殺菌済み蜂蜜では発酵しない。)

mead の血縁語は、梵語、トカラ語B
スラブ語派、ゲルマン語派、バルト語派、
ケルト語派、古典ギリシャ語といった
印欧諸語に多数見つかるが、
そればかりではなく、トカラ語B
古代中国語 mit () になったのだという。
もしそうだとすると、日本語のみつも、
漢語由来だから、同源ということになる。
の現代中国音はで、
「とろとろした甘いもの」を指す。

漢字のは虫以外の部位が
音を表すとともに、閉じたところ
(この場合は養蜂家の巣箱)
(花のみつを) あつめることで、
虫はこの字の場合「みつばち」だから、
会意的形声文字といえる。

紀元前一七〇〇年頃から紀元前五〇〇年頃の
ヴェーダ時代のインドの
梵語で mádhu は「蜜、蜂蜜酒」のことで、
形容詞扱いでは「甘い」の意味。

西洋最古の蜂蜜酒は
シュトゥットガルト近くの
(Stuttgart)
ホッホドルフというところにある
(Hochdorf)
王墓の遺跡から出土した
青銅の大釜に入っていたものだという。
この墓は紀元前五ニ五年頃のもので、
大釜には多種多様な花粉と蜜蝋が入っていたが、
この塊は当初、蜂蜜、乃至、蜂蜜酒であった、
と考えられている。

血縁の古典ギリシャ語は µέθυ
「ワイン」を指し、
アメジスト、メタン、メチル、メチレン
を構成する要素になっている。

プリニウスの『博物記』には、
西暦一世紀頃の蜂蜜酒の作り方が書いてあり、
それによると、蜂蜜に雨水を
一対三の割合で混ぜて、
犬星 (シリウス) が昇る季節 (真夏)
四十日間天日に当てて作られていた、のだという。

北欧神話では、賢者クヴァシルの
(Kvasir)
血と蜂蜜を混ぜて作ったお酒は
飲む者を詩人にする。また、
詩歌を比喩で「クヴァシルの血」という。

Berry は「実」を指し、
 ストロベリー (strawberry)
 ブルーベリー (blue berry)
 ラズベリー (raspberry)
などのベリーであるから、今では
日本語の語彙にも入っている。
古英語の「実」、即ち、現代英語 fruit
相当する言葉は二語しかなく、
ウィークリーの語源辞典の
berry の項目には:
 ・これと apple は唯一実を指す土着語である。
(An Etymological Dictionary of Modern English,
published by Ernest Weekley , 1921, says
in the description of berry:
  
This and apple are the only native fruit names.)

apple berry も、人、または、鳥や獣が
好んで食べるものを指していた。

apple は果肉のつぶれにくいものを指し、
berry は果肉がつぶれやすいものを
指すのかもしれない
古英語期の berry は主に
 ぶどう (grape)
を指していた。
(Old English period: between c700 and c1150.)

berry はゲルマン語派の言葉で、
ゲルマン祖語 *basjam / *bazjam
「かがやく実」からできているという。
このゲルマン祖語は印欧祖語 *bhā-
「かがやく」から。この祖語の子孫語は
 beacon 「印、前触れ」
 beckon 「手招きする、合図する、印」
 banner 「横断幕、バナー」
 band 「団体、バンド」
などである。

印欧祖語の bh- は古典ギリシャ語の ph-
対応し、たとえば、phos 「光」から、
 phosphorus 「リン」
ができている。また、
phainein 「光にさらす、見せる」から、
 fantasy 「空想、ファンタジー」
 phantom 「霊、幻」
 phase 「段階、過程」
 phenomenon 「現象」
などができている。

また、梵語 bhas- は「食べる」こと。

この語源説に従うと、
berry
とは「目立つもの、現れるもの」
ということになるかもしれない。

現代語の berry
(果肉内部の硬くて大きなたね) のないものを
指すが、古くは必ずしもそうではなく、
鳥さくらんぼ (bird-cherry) のように、
実に比して大粒の種が入っているものも
berry
と呼んでいた。

berry
は概ね、低木や低木状、
つる状の植物、及び、
それらの実を広く指す。
mulberry
bilberry など -berry
ついているものは、もちろん、
例えば、
 セイヨウヒイラギ (holly)
 ヤドリギ (mistletoe)
 バラの実 (rose hip)
などは -berry がついていなくとも、
berry と呼ばれる場合がある。
スコットランドやイングランド北部では、
 グズベリー (gooseberry)
berry と呼ぶ。

berry は、小粒の「実」に類似する
「たね、豆」を指すようになり、
十八世紀になると、
 コーヒー豆 (coffee bean)
を指すようになった。

fruit が英語に入ったのは中英語期。
(Middle English Period: c1100c1500)
こちらはラテン語の
動詞語根 frui- 「喜ぶ」から。
名詞形 fruitio (英語 fruition) は、
「成果、結実、達成」と
いった意味だが、原義的には
「よろこび」であった。
 Fruition came via Old French from Latin
 whose original sense was “enjoyment.”
berry はまた、植物学的には
「液果」のことであり、
 トマト (tomato)
 バナナ (banana)
 レモン (lemon)
 きゅうり (cucumber)
 瓜 (guord)
 パイナッブル (pineapple)
など、パルプ状の果肉の中に
複数の種子がある実を指す。
 ・The pineapple is neither a pine nor an apple.
 It's actually a very big berry.
 パイナッブルは松 (パイン) でもアップルでもない。
 実際にはとても大きな液果である。
 
英国人はトマトを
apple
と呼んだこともあるが、
植物学的には berry である。

また、植物学的には、
-berry
の名がついていても、
 berry
に属さないものがある。  
 ・Many so-called berries do not fit
 the botanical definition. Strawberries
 raspberries, and mulberries, for exmaple,
 are not berries.
 ・ベリーの名で呼ばれる多くのものは
 植物学的定義に合致しない。例えば、
 ストロベー ()、ラズベリー、

果実や実はありがたいものであるから、
二十世紀になると、「ドル」ゃ「ポンド」の
俗語的用法が発生し、転じて、

形や色が類似していて、
両方とも食べることがてぎるという
共通点がある。
この意味での使用例は十八世紀から。

水産物についていえば、
「子持ちの、卵を有する」こと。
OED
は次の用例文を採録している。
 ・Hen lobsters are found in berry
 at all times of the year.    
 ・雌のロブスターは一年中いつも
 子持ちで見つかる。

Berries には謎めいた俗語的語義
 猫のひげ (cat’s whiskers)
の意味がある。

berry は動詞では、
「ベリーをとる、ie. いちご狩りをする」こと。

はその名詞形。
 ・"Let's go berrying this weekend,"
 said the aunt.
 ・「週末にベリーを摘みに行きましょう」
 とおばさんは言った。

Brown as a berry ---
実のように茶色い」とは
「よく日焼けしている」こと。
 He was as brown as a berry
 and spent all day sunning himself
 on the deck.
 彼はよく日焼けしていて、
 一日中デッキで日光浴をして
 過ごしていた。

初出は中英語期に記された
チョーサー作の『カンタベリー物語』。
馬のことを表現するのにも用いているから、
「日焼けしている」ことだけではなく、
動物を指すときは 
 「茶色の毛並みの
の意味になる。

Berry は古英語では
 ぶどう (grape)
を指すことか多く、また、
Brown は「暗い (色の)」の
意味であったから、
Brown as a berry
「ぶどうのように黒い」が
原義なのかもしれない。

Apple はゲルマン語で、血縁語は
スラブ語派、バルト語派、ケルト語派に
見つかるが、古典ギリシャ語やラテン語には
見当たらない。それでも印欧祖語は
再建されている。
 PIE abel- “apple.”

Apple の原義は「実」だったが、
のちに限定的となり、
りんご」を指すようになった。

古英語 (アングロ・サクソン語)
「実」を指す言葉は二つしかなかった。
 1. Old English æppel “any kind of fruit
 other than berries; nut; someone or
 something cherished (ie. pupil or eyeball).”
 2. Old English berie “berry.”

Apple は「くるみ、木の実」も含めて、
berry 以外のあらゆる実を指し、
古英語期にはすでに
apple of one’s eye --- 即ち、
「瞳、大切なもの ( / )」の意味があった。
このフレーズは、以下のように用いる。

 ・She’s the apple of her father’s eye.
  あの子は父親にとても大切にされている。

 ・He (God) found him (Jacob) in a desert land,
 and the waste howling wilderness;
 he led him about, he instructed him,
 he kept him as the apple of his eye.
 神はヤコブを荒涼とした原野たる砂漠に見つけて、

Apple が「瞳、目玉」を
指すこともあるということは、

ロキがアースガルズに入っていくのを
スィアチは追いかけていったが、
ロキが過ぎ去ると共に、炎が
ばっと上がり、スィアチの翼に燃え移った。
アース神たちは薪を積みあげて、
あらかじめ火をおこして
待ち構えていたのだった。
あわれスィアチは火だるまとなって
地面に落ち、アース神たちに殺された。
ロキはイズンをくるみに変えて、
アースガルズに連れ戻した。


イズンの実不老不死の実
(Apple of perpetual youth)
ともいわれる。

古英語のゆびのみ (fingeræppla)
「椰子の実」であり、
大地の実 (eorþæppla)
「きゅうり」であった。
中英語の楽園の実 (appel of paradis)
比喩的に「バナナ」を指すこともあった。

今でも修飾語を伴うと「実」の意味になる。
西インド諸島で、ワニが食べるという実は、
 alligator apple
オーストラリアの食用の実は、

卵の形の茄子は、

語源で「りんご、実」を指す。

ローマの果実や木の実の女神ポモナは親戚語。
 ・Pomona is the Roman goddess of fruits and nuts.

ラテン語にはまた fructus (English fruit) もある。
フルーツはもともと
(生ったことの) 喜び、収穫」
の意味であった。

Apple
に意味上対応するギリシャ語は
 µῆλον
現代英語の melon
「甘みのある瓜、メロン、西瓜」を指すが、
古典ギリシャ語では、もっと様々なものを指す。
ギリシャをはじめ、ケルト諸国や
中央アジアの国々では、

など呼ばれていた。語尾の - は、
いちごの -と同じで、果物につけた接尾辞。
りんご が「りんごの木」を
指すこともあるように、英語でも
apple tree
を単に apple とはしょることは多い。
十七世紀のベイコンは、

  樫や橅は林檎の木や梨の木よりも

と書き残している。

丸っこいものや赤いものを親しみをこめて
apple
と形容することもある。

Applesauce ---

ソースであるが、アメリカでは、
お世辞を無視したり、
相手にしたくないときに、
アップルソース」ということがあった。

 ・Don’t give me that applesauce!
  そんなくだらないことはどうでもいい。

Big Apple

Big Apple 

Big Apple ---
大きいりんご」はニューヨークのこと。
Big を落として単に Apple ということもある。
この呼び名はその昔、重要人物を
指したこともあるといい、その点では、
top banana というフレーズに似ている。

二十世紀のはじめ、『モーニング・テレグラフ』の
記者フィッツジェラルドは、ニューオルリンズで
黒人の馬丁たちが「市の競馬場」のことを
大きいりんご」と呼んでいるの聞いたと
書きのこしている。一九三〇年代になると、
黒人のジャズ・ミュージシャンたちが
ニューヨーク、または、その黒人街の
ハーレムを、ジャズの都として、
大きいりんご」または、単に「りんご」と
呼ぶようになった。この呼び名は
いったん下火になったが、一九七一年、
ニューヨークの観光協会のジレット会長によって
宣伝されて復活した。

FitzGerald, a reporter for the Morning Telegraph, claimed that he had heard this phrase used by Black stable-hands in New Orleans to refer to the  “city’s racetracks.” In 1930s, Black jazz musicians called Harlem or the New York City the “Big Apple,” or simply, the “Apple,” as the capital of jazz. This nickname, then, was forgotten for some decades, but it came back in 1971, when the President of the New York Convention & Visitor Bureau Charles Gillett made promotion.]

アメリカの家庭でよく作られるから、
アップルパイのようにアメリカ的な」といえば、
「とてもアメリカ的な」ことを指す。
 ・“I'm as American as apple pie,”

 ・Innovation and creativity,
 once as American as apple pie and baseball,
 are slowly on the decline as we lose ground

アップルパイはりんごの果肉を
生地に包んで焼くが、シーツを生地、
人をりんごにたとえたアップルパイベッド
といういたずらがある。そのベッドに
寝た人はシーツが折りたたんであって、
脚を伸ばすことができない。
語源は、一説に、仏語だという。
 French nappe pliée “folded napikin”
 → apple-pie bed
この説によると、不定冠詞 a nappe から
 n を奪ったのだという。

 → an appe pliee
 → an apple-pie (bed)

Apple-pie order ---
アップルパイの列」は
完璧に揃っているさまを指し、
一説に Cap-a-pie order 「頭から
つま先まで揃っていること」の転訛
と解かれるが、語源ははっきりしていない。
