20th c., “espresso topped by white foam of steamed milk like a hood on a capuchin's head,” borrowed from Italian cappuccino, made up of capuchin “hood, cowl, St Franciscan monk,” made up of cappa, cognate with cape & Italian capo “head.”
     A friar of St. Francis order wears a pointed hood on his head, which resembles the white foam of this drink.
